OK, lets see where I can help. I believe if you want the 7" wide wheels, Maxx Struts are a must. 2-3 inches of drop is recommended. If you are going for a Super Beetle, check and replace all front end suspension and steering components as neccesary, especially if you want to avoid or fix the Super Beetle shimmies and shakes. As far as the wheels you want, I am not sure. I see so many different stock wheels coming with those Jettas these days.
As an example, on my car I have the Maxx Struts, lowered 2 inches, along with 17x7 inch wheels with an ET of 40mm, and 205/40 tires. The fit is PERFECT. No rubbing either way and the wheels look neatly tucked inside the fenders. On the back end, for me to fit my wheels and tires (same size as front), I had to flip a torsion bolt on each side--you'll know which one it is-- to keep it from rubbing/scraping on the wheel and tire. If you plan on lowering the rear end, you'll need to trim an appropriate amount off of the bump stops. Also, in order for me to get my wheels caps on, I had to grind down the axle stub a little bit.
So, once you find the size and offset of the particular wheels you want, go from there using this info and the rest that is to come from the others who have done the same thing. Oh, and you'll need to re-drill you drums for the appropriate bolt pattern.
