Heel/toe to get into first?

Hi! Did my first ever auto-x last night and the beetle handled pretty good. Needs some suspension work but one of the other issues I have is to get it into first while moving I have to double clutch, or at least rev match. I'm using the stock pedal assembly, stock brake m/c has a lot of pedal travel. Heel/toe with it is doable but way more difficult than most other cars I've driven.

What do you guys do? Aside from aftermarket pedal assemblies, Add extension to the throttle pedal? Just heel toe using the stock assembly? Ram it into gear ?
