Which coil-over shocks do I use?

I want to upgrade my front and rear suspension to use coil-over shocks in the hopes of gaining better stability at speed and while under braking. The car currently has K+L + Swing axel suspension (not the best for cornering, but it is a straight line car anyway).

I was hoping that people could let me know what brands and types (spring weights etc) of coil-overs they've used to convert their suspension to coil-over only.

Also, how does one go about removing the rear torsion bars, for a coil-over conversion. Is it as simple as pulling out the torsion bars and putting it back together? Thats about the only part of a VW i've never disassembled...

As for the front suspension.. Whats the best approach to removing the front torsions while still maintaining independant suspension? Using a thru-bar of sorts like the red-9-design kit?
