but why not just get a Pre-made Sheet and cut out your own
and cover the "WOOD"

Once the epoxy matrix is hardened, he won't be able to form it to the shape of the dash.

Your best bet if you want a CF dash is to layup your own CF and epoxy right onto your dash, but getting your fibers lined up all pretty will be tough.
