steering wheel dish

Hey everyone i have a question about steering wheel dish, im lookin at a wheel that has a 65mm dish, about 2.5 inches, that seems pretty deep to me. most wheels ive seen have like a 35mm or no dish at all. The question i have is with a 65mm dish, adaptor hub and a quick release on there am i going to have to be sitting in the back seat to steer do you think it wll be to much?

It would be too much for me if that set-up were in my '71 Super. The steering wheel would be to close to my body for my liking. Even if I compromised between the steering wheel being a little closer to me and the pedals being a little further from me, I would be distressed about the shifter. (I am looking for a bent-shaft shifter as it is.)

As a point of reference, I am average height (5' 9"), a bit overweight, and I tend to be further back in my driving position than others in my category.
